Oh Avocado! Chocolate Pudding
If you haven’t already met, I’d like to introduce you to this amazing fruit, Avocado! You may have noticed this little guy popping up all over on menus and recipes and wondered, “what’s the big whoop?”
My fascination with the versatility of the avocado goes further than green skin deep. It is a heart-healthy fat that can be used as a spread, dip, baby food, pudding base, and so many other things that get me all starry eyed…
Not only do avocados nourish your brain, but they also contain potassium, and about 80mg of the antioxidants that support eye health, lutein and zeaxanthin. Which gives us avocado lovers something to look forward to.
One of my favorite recipes to share I like to give to those that have children or an occasional sweet tooth, Avocado Chocolate Pudding. Yes. Avocados and chocolate dance together to make a creamy delight or freeze it to replace ice cream on a hot summer day.
Avocado Pudding
Ingredients:
4 Servings
- 2 ripe avocados
- 1 large ripe banana
- ½ cup unsweetened cocoa or cacao powder
- ¼ cup almond, flax, or coconut milk
Optional additions:
- 1 pinch of cinnamon
- 2 teaspoons vanilla extract
- 2 teaspoons almond extract
- ½ cup creamy peanut, cashew, or almond butter
Optional Topping ideas:
- Coconut whipped cream
- Pistachios
- Berries
Directions:
Blend all ingredients together and chill in individual portions in fridge for a few hours. YUM!
